Our organic EVOO is meticulously sourced from our own family farms, and its quality has earned the trust of Michelin-star chefs, showcasing the excellence of Moroccan culinary heritage.
The harsh desert environment, where temperatures can soar to 127°F and water is scarce, puts olive trees under considerable stress. This survival instinct prompts the trees to produce significant quantities of polyphenols, notably Hydroxytyrosol, a powerful antioxidant. Consequently, the EVOO derived from these olives boasts an exceptional level of hydroxytyrosol.
Morocco's challenging yet unique landscape nurtures our olive oil. We’ve embraced sustainable development by protecting both the environment and the people involved in the cultivation process. Growing the right cultivars in pristine surroundings is vital for achieving exceptional olive oil. Our production methods encompass mechanical processes and cold pressing techniques to ensure we only produce premium organic EVOO.

Atlas’s offerings include a blend of traditional and modern cultivars, featuring an old bicentenary orchard with varieties such as Picholine du Languedoc (80%), Picholine Marocaine (10%), and others, alongside a modern orchard cultivated with Arbequina (84%) and Arbossana (16%).
Harvest occurs from late September to December, utilizing a first cold press method at a maximum temperature of 26°C. The yield varies between 11.5% and 15%, producing impressive volumes of oil with low acidity levels—up to 450,000 liters from modern orchards.
