Atlas Olive Oils has been a family-run business for four generations, with a rich tradition in olive oil production dating back to 1887. Our organic extra virgin olive oil (EVOO) is crafted exclusively from our family farms and has gained the trust of Michelin-starred chefs, embodying the culinary excellence of Moroccan culture.
Our olive oil is naturally abundant in polyphenols, particularly hydroxytyrosol, a powerful antioxidant. The harsh desert environment (temperatures reaching 127°F in summer, rocky soil with limited root development, and scarce water) places stress on our olive trees. In response to this adversity, the trees produce a significant amount of polyphenols to survive, resulting in oil that boasts exceptional hydroxytyrosol levels.

Our extraction process employs first cold pressing at a maximum temperature of 26°C, using a two-phase continuous system that guarantees optimal quality. The yield ranges between 11.0% to 14%, resulting in bottles of 0.25 or 0.5 liters.
