Nova Maple Syrup is a family-produced product hailing from Northwest Pennsylvania, sustainably harvested from our own hardwood forests. This 100% Grade A Maple Syrup has a consistency similar to brown sugar, with the potential for small, soft lumps that can be easily crumbled with light pressure. This is due to the required residual moisture; over-dried maple sugar forms hard clumps and should be avoided.
No chemical/organic herbicides or pesticides are used in the production of this sugar. The plastic jug is 100% BPA-free and sealed for safety. There are no artificial flavors, preservatives, or dyes. It is gluten and dairy-free.
Nova Maple Syrup utilizes the new International Grading System implemented in April 2015. All of our syrup is Grade A, with the sub-grades varying based on weather, trees, and individual season. We ship Grade A Golden Delicate Taste, Amber Rich, Dark Robust, and Very Dark Strong. We do not sell the new Grade B Commercial (formerly Grade C) syrup. Darker syrups possess a stronger maple flavor than lighter varieties, but both are equally sweet, comprising 67% all-natural sugar and 33% water. The preference comes down to personal taste.
In addition to pure maple syrup, our product lineup includes maple sugar, a great white sugar substitute offering an unprocessed sweetener with a subtle maple flavor; maple cream, a rich spread with a peanut butter-like consistency; and melt-in-your-mouth maple candy, a top-seller during the holidays.
We tap both hard (sugar) and soft (red) maple trees across four properties in January or February, depending on winter temperature forecasts. Tubing is set up throughout the woods, connecting all maple trees to a vacuum pump that helps draw sap from the trees. The clear, water-like maple sap ranges from 1-3% sugar content.
The collected sap undergoes reverse osmosis to increase the sugar content before being pumped into our evaporator, making the boiling process more efficient. We also utilize a steam recovery system to conserve fuel oil. Maple syrup is ready for filtering and bottling when it reaches 67% sugar.
Bottling occurs at a high temperature (160-180 degrees) to eliminate any bacterial growth, with a final filtration before sealing and shipping to customers. Throughout the year, we use the stored barrel syrup to craft our other products.
Nova Maple Syrup was established in 2015 with the purchase of a 100-acre property in Hartstown, Pennsylvania. Our inaugural commercial syrup season began in late January 2016 with roughly 7,500 taps, which has since expanded to 22,500 taps covering 275 acres.
This business venture started as a hobby in 2013 on 1.5 acres, tapping 50 trees and yielding 17 gallons of maple syrup. The 2019 season saw a remarkable increase to over 5,000 gallons.
The family behind Nova Maple Syrup includes Jake and Hailee Leveto, who gave away glass bottles of syrup at their 2014 wedding. The business is named after their golden retriever/German shepherd mix, Nova. Since turning their hobby into a business, they have also welcomed two sons, born in 2017 and 2019.
