Our organic EVOO is sourced exclusively from our family farms, trusted by Michelin-starred chefs for its premium quality. The harsh desert conditions, characterized by extreme temperatures (127°F in summer), poor soil, and water scarcity, compel our olive trees to produce an abundance of polyphenols, particularly hydroxytyrosol. This survival instinct results in olive oil that is remarkably rich in antioxidants.

Morocco's challenging landscape uniquely contributes to the creation of our oil. We focus on sustainable development, protecting both the environment and local communities while establishing olive groves. By cultivating appropriate cultivars in pristine conditions, we are able to produce exceptional olive oil. Our farming practices incorporate mechanized processes and first cold pressing techniques, only using premium organic-grade olives.
Atlas Olive Oils' Premium Offerings
Our diverse range of cultivars includes ancient varieties such as Picholine du Languedoc (80%), Picholine Marocaine (10%), Menara, Haouzia, Chemlali, and Dahbia alongside modern selections like Arbequina (84%) and Arbossana (16%). Spanning an area of 245 hectares (605 acres) in the Marrakech region, our olive trees thrive at an altitude of 390 meters above sea level. The well-balanced soil composition (30% clay, 35% loamy, and 35% sandy) further enhances the quality of the olives.
For those seeking the highest quality, our old bicentenary orchards yield 25,000 liters of oil with a maximum acidity of 0.4° upon bottling. The modern orchards, in comparison, produce 450,000 liters at a maximum acidity of only 0.2°. Our harvesting season stretches from late September to the end of December, utilizing a two-phase continuous extraction system at a maximum temperature of 26°C.
